This fresh corn salad recipe is packed with fresh, tasty, and healthy vegetables such as corn, cucumber, tomatoes, onion, avocado, and green leafy fresh herbs. This salad can be served as a snack or as a side dish to a weekend dinner. This recipe only takes around 15 minutes to prepare.
Ingredients:
• 5 ears corn (shucked)
• 1 English cucumber (diced)
• 2 Roma tomatoes (diced)
• 1/2 red onion (minced)
• 1 avocado (diced)
• 1/4 cup fresh mint leaves (chopped)
• 1/2 cup fresh basil leaves (chopped)
For the dressing:
• 1/4 cup extra virgin olive oil
• 1/2 tsp salt
• 1/2 tsp freshly ground black pepper
• 3 tbsp cider vinegar
• 1 tbsp red wine vinegar
Instructions:
Set a large pot over high heat.
Add water and bring to a boil.
Add 5 ears of corn.
Boil for about 5 minutes.
Once done, drain, and pat dry the corns.
Cut off the kernels from the cob using a knife.
Place in a large mixing bowl.
Add other ingredients such as cucumber, Roma tomatoes, red onion, avocado, mint leaves, and basil leaves.
For the dressing:
In a small mixing bowl, add ingredients for the dressing.
Mix until well combined.
Drizzle the dressing over the corn salad.
Toss to combine well.
Tips and ideas:
Toss the ingredients gently to avoid smushing the avocados.
You can add more salad vegetables according to your preference.
