How To Make Greek Salad

Horiatiki salad, most popularly known as Greek salad, is a famous dish from the Greek cuisine. It generally contains slices of bell peppers, onions, tomatoes, olives, and feta cheese. This mixture of vegetables is drizzled with vinaigrette that includes olive oil, salt, pepper, garlic, and sometimes red wine. This dish is quick and easy to prepare and takes about 20 minutes.

Ingredients:

• 1 hothouse cucumber (unpeeled, seeded, cut into 1/4-inch thick)
• 1 red bell pepper (chopped)
• 1 yellow bell pepper (chopped)
• 1-pint grape or cherry tomatoes (halved)
• 1/2 red onion (sliced)
• 1/2 cup kalamata olives (pitted)
• 1/2 lb feta cheese (diced into 1/2-inch thick)

Vinaigrette:

• 2 cloves of garlic (minced)
• 1/2 cup olive oil
• 1/4 cup red wine vinegar
• 1/2 tsp freshly ground pepper
• 1/2 tsp Dijon mustard
• 1 tsp dried oregano (crushed)
• 1 tsp kosher salt

Instructions:

This recipe takes about 20 minutes. It makes for six servings.

Vinaigrette:

In a mixing bowl, add 1/2 cup olive oil, 1/4 cup red wine vinegar, 1/2 tsp Dijon mustard, 1 tsp crushed dried oregano, 1 tsp kosher salt, 1/2 tsp freshly ground pepper, and minced garlic.
Whisk to combine well.
Set aside.

In another bowl, add sliced hothouse cucumber, sliced red and yellow bell pepper, halved cherry tomatoes, sliced red onion, and kalamata olives.
Pour the vinaigrette into the vegetables.
Toss to mix well.
Add feta cheese cubes and toss.
Serve and enjoy!
