With this meal, you will also get vitamins B and C, manganese, phosphorus, niacin, pantothenic acid, thiamin, folate, magnesium, zinc, riboflavin, potassium, copper, selenium, and dietary fiber. Balsamic vinegar, which is used in the marinade, gives the Portobello mushrooms an exciting sweet-tart flavor, while the roasted garlic adds a depth of flavor to the mashed potatoes.
