Pancakes are usually served during breakfast. They are made from flour, eggs, and milk. These potato pancakes are great for vegans who do not eat eggs. Made from potatoes, these pancakes are delicious, starchy, and healthy. You can season these pancakes however you like by adding herbs. You can also bake these pancakes so that it has less oil.
This recipe takes about to 6 to 8 minutes to make. Serves 7 to 8 pancakes.
• 2 medium-sized potatoes
• Quarter tsp of salt
• Spring onion
• Red bell pepper
Peel the potatoes. Cut into small cubes.
Grind the potatoes until they become a fine paste. You can use a hand grinder, blender or food processor.
Drain the potato paste to remove the liquid.
Set aside the potato liquid for 15 minutes.
Chop spring onions and red bell pepper into small pieces to use as garnish.
After 15 minutes, the potato starch should have settled at the bottom of the bowl.
Remove the liquid so that only the potato starch is left in the bowl.
Add the potato starch to the potato paste.
Sprinkle with salt and mix well with a spoon.
Place a frying pan over low heat and add some oil enough to cover the pan.
Scoop a spoonful of potato mixture and flatten with a spoon to look like pancakes.
Add garnish on top while cooking on the pan.
Fry both sides for a few minutes until golden brown.
Add more garnish as preferred and serve.
