Cheese Stuffed Mushroom Recipe

Do you have some vegetarian friends coming over for dinner? Do you plan to make two meals so that your meat-loving friends have a different dish? With the cheese stuffed mushrooms recipe, you can satisfy both your vegetarian and meat-loving friends!

This recipe takes roughly 8 to 15 minutes to prepare. Serves 2.

Ingredients:

• 2 medium sized mushrooms
• 2 tbsps of olive oil
• Thyme
• 1 clove of garlic, grated
• Chili flakes
• 2 stalks of spring onions, chopped
• Bacon

Instructions:

Preheat the oven to 200 to 220C.
Peel off the back of the mushroom to remove dirt. Remove the stalks.
In a small bowl, mix olive oil and chopped thyme, and garlic. Mix well.
Brush the oil mixture at the back of the mushrooms.
Turn over the mushrooms and make the filling. Add cream cheese, chili flakes to taste, and spring onions onto the mushrooms.
Place the mushrooms into the oven for 5 to 10 minutes.
For the meat eaters, place a few strips of bacon onto a baking tray and place it in the oven along with the mushrooms.
Once mushrooms and bacon are cooked, plate the mushrooms with a simple green salad and top of with bacon strips.

Ideas And Tips:

• Instead of bacon, you can also substitute prosciutto or ham.

• By peeling off the back of the mushroom, you don’t need to rinse them at all.

• Cream cheese is the best for this recipe, but you can also use other types of cheese such as cheddar or ricotta cheese.
