Matcha Mille Crepes Cake

A crepe is a kind of thin pastry usually made from wheat or buckwheat flour. It is a known French treat but has evolved and well-loved all over the world. Crepe cakes seem to be becoming very popular these days. They are made with layers of crepes with pastry cream in between.

Crepe cakes sold in coffee shops or cake shops can be pricey but with this recipe, you can make and enjoy a matcha mille crepe cake at home. This cake is light and moist and will surely satisfy every sweet tooth’s craving.

Ingredients:

For Matcha Crepes:

• 60 grams of all-purpose flour
• 2 tsp matcha powder
• 2 tbsp granulated sugar
• 100 milliliters of milk
• 1 egg
• 1 tbsp melted butter

Matcha Cream:

• 200 grams of whipping cream
• 3 tbsp sugar
• 3 tsp matcha powder

Instructions:

This recipe takes about 45 minutes to make. The cake needs to set in the refrigerator for at least 6 hours. Serves 1 5-inch cake.

To make the crepe, start by sifting flour and matcha powder into a large mixing bowl.
Add sugar and mix.
Whisk together milk, egg, and butter in a separate bowl.
Combine the wet and dry ingredients, then whisk until smooth.
Heat a small frying pan over medium-low heat, then brush with oil or butter.
Ladle crepe mixture into the pan.
Quickly but, gently swirl the pan around to spread the crepe batter.
Cook for 30 seconds then flip the crepe.
Cook the other side for another 30 seconds.
Repeat this process for the rest of the crepe batter.
You should make 20 crepes.
Place a mixing bowl on top of a larger bowl filled with ice cubes.
Pour whipping cream into the bowl.
Using a hand mixer, start beating on low speed until bubbles appear.
Gradually add sugar while beating on medium speed until soft peaks are formed.
Add matcha powder and continue beating until stiff peaks are formed.
To make the crepes uniform in sizes, use a 5″ cake pan as a guide.
Place the cake pan on top of the crepe and run a knife around the edges.
Start assembling the cake by spreading matcha spread on top of the crepe.
Put another crepe on top and spread matcha cream.
Repeat this process with the rest of the crepes finishing with the last piece of crepe on top.
Cover with plastic wrap and refrigerate for at least 6 hours to let the layers set.
Before serving the cake, dust it with matcha powder.

Ideas And Tips:

• You can also use this recipe to make other crepe cake flavors. You can use cocoa powder to substitute for matcha powder. You can also create a plain crepe, then flavor the cream with fruit jams.
