One Pan Creamy Mushroom Chicken

• 2 chicken breasts (boneless, skinless, and cut in half)
• 6 button mushrooms (sliced)
• Salt and pepper to taste
• 3 garlic cloves (chopped)
• 1/2 onion (chopped)
• 1/2 cup chicken stock
• 1/2 cup heavy cream
• 1/2 cup cheddar cheese (grated)
• 1/2 tsp parsley (finely chopped for garnishing)
• Oil (for frying chicken)

Instructions:

This recipe takes about 40 minutes. Serves 2.

Season the chicken breasts with salt and pepper.
Set a frying pan over medium-high heat.
Add some oil and warm it up.
Fry the chicken breasts for 5 minutes on each side or until browned.
Remove cooked chicken from the pan and transfer to a plate.
Set it aside.
In the same pan, saute chopped garlic cloves, chopped onion, and sliced mushrooms until soft.
Pour chicken stock and heavy cream.
Stir it and let it lightly boil.
Add grated cheddar cheese and stir until cheese melts.
Add the cooked chicken back.
Let it simmer for 5 minutes or until sauce thickens.
Spoon some sauce over the top of the chicken.
Once sauce thickens, remove from the heat.
Transfer to a plate and garnish with finely chopped parsley.
