Blackened Fish Recipe – Easy Spicy Fish Dish

Blackening is a cooking method in which the food like meat, poultry or fish is dipped in melted butter, then rubbed with a blackening spice mix before frying in oil in a very hot cast-iron skillet. There is no standard recipe for the blackening spice mix but, it usually includes salt, pepper, onion powder, garlic powder, paprika, chili powder, oregano, and thyme. When blacking is done properly, the result is a spicy, crispy, attractively dark crust that gives way to a tender and juicy center. This cooking method originated in New Orleans and was innovated, perfected and popularized by Chef Paul Prudhomme in the 80s.

In this blacked fish recipe, instead of dipping in melted butter, the fish fillets are directly rubbed with the spice mix, then fried in a mixture of butter and olive oil. This cuts the amount of butter and oil in the dish without ruining the taste and texture. You still get fish fillets with a delectable spicy dark crust and a moist and tender interior. These fish fillets are perfect with rice or steamed vegetables.

Ingredients:

This recipe takes about 10 to 15 minutes to make. Serves 2.

• 2 (4-ounce) mahi-mahi fillets
• ½ tsp salt
• ¼ tsp ginger powder
• ¼ tsp paprika
• ¼ tsp chili powder
• ¼ tsp garlic powder
• ½ tbsp butter
• ½ tbsp olive oil

Instructions:

Pat the fish fillets dry using a paper towel.
Rub all sides with salt, ginger powder, paprika, chili powder, and garlic powder.
Melt butter in a skillet or non-stick pan over medium-high heat.
Pour olive oil into the pan and gently swirl the pan to mix the butter and olive oil.
Gently slide the fish fillets into the pan.
Cook for 2 minutes on each side.
Transfer blackened fish fillets to a serving dish.

Ideas And Tips:

Aside from mahi-mahi, you can use tilapia, catfish, sea bass, Baja fish, pomfret, salmon, red snapper, bream or pollock.

To get an evenly seasoned fish, you can mix the salt and spices together in a small bowl first before rubbing them to the fish fillets.

If the blackening seasoning is too spicy for you, you can use black pepper instead of chili powder.

Grilled Mahi Mahi | How To Grill Mahi Mahi Fish Tacos

Mahi-mahi is a Hawaiin term for common dolphinfish. It is a surface-dwelling ray-finned fish usually found in tropical waters. It is also commonly called dorado. Mahi-mahi translates to “very strong” in Hawaiian.

This recipe shows how to properly grill this light and tasty fish. Cooking it only takes a few minutes, and it is served in a taco filled with vegetables and avocado slices.

Ingredients:

• 3 pieces of Mahi Mahi fish fillets

Marinade:

• 1/4 cup of fresh lime juice
• 1 tbsp of oil
• 1 tbsp of honey
• 1/4 tsp of cayenne pepper
• Salt

Blackened Seasoning:

• 1 tbsp of sweet paprika
• 1 tbsp of sugar
• 2 tbsp of salt
• 1 tsp of garlic powder
• 1 tsp of onion powder
• 1/4 tsp of cayenne pepper
• 2 tsp of lemon juice
• 1/4 tsp of thyme
• 1/4 tsp of oregano
• 1/4 tsp of basil
• 1/4 tsp of cumin

Glaze:

• 2 tbsp of lime juice
• 2 tbsp of olive oil
• 1 tbsp of rice wine vinegar
• 1 tbsp of honey
• Salt
• Pepper

Instructions:

Grilling the fish takes about 5 to 6 minutes. Marinating the fish takes 45 to 60 minutes. Serves 2 to 3.

Prepare your grill.
In a small bowl, add all of the ingredients for the marinade and whisk until well combined.
Place the Mahi-Mahi fish fillets in a Ziplock bag and pour the marinade.
Keep in the fridge for 40 to 60 minutes.
Remove the fish from the bag and set aside for a few minutes.
Prepare the blackened seasoning by combining all of the ingredients in a bowl.
Season both sides of the fish fillets.
Grill the fish fillet for 3 minutes on each side.
Glaze the fillet.
To make the taco, use tortilla shells, sliced avocados, onions, tomatoes and place sliced grilled fish fillet.

Ideas And Tips:

• You can serve the grilled fish on its own with your own preferred side dish.

• Make sure you do not marinade the fish fillets for more than 60 minutes because the lime juice will start to cook them.
