This light and creamy cheesecake recipe is a classic dish and a crowd favorite! The crust is made of crackers crushed into fine pieces. The filling is a mixture of cream cheese, sugar and eggs, making it soft and sweet. Top it off with your desired toppings such as mixed berries and fresh thick cream.
Ingredients:
Crust:
• 16-18 Graham crackers
• 1 cup toasted pecans
• 1/4 cup granulated sugar
• 5 tbsp unsalted butter (melted)
Filling:
• 2 1/2 lbs cream cheese (at room temperature)
• 1 3/4 cups sugar
• 1/2 tsp salt
• 3/4 cup sour cream
• 2 tsp vanilla extract
• 3 tbsp all-purpose flour
• 5 eggs
Instructions:
Crust:
Prepare a food processor.
Add 16-18 Graham crackers into the processor.
Add 1 cup of toasted pecans and 1/4 cup granulated sugar.
Push until fine crumbles form.
Gradually add 5 tbsp of melted unsalted butter into the mixture while blending.
Once well incorporated, transfer into a springform pan.
Spread evenly, then work along the sides and the bottom to form a crust.
Place it inside the oven and bake for 10 minutes at 350 F.
Once done, remove from the oven.
Set aside.
Filling:
Prepare a mixer.
Add 2 1/2 lbs of cream cheese and mix.
While it is mixing, add 1 3/4 cups of sugar.
Continue mixing, then add 2/2 tsp salt and 3/4 cup sour cream.
Mix until well blended.
Add 2 tsp of vanilla extract, then mix again.
Sift in 3 tbsp all-purpose flour into the mixture.
Mix until flour is well blended.
Add one egg at a time while mixing.
Once the filling is smooth and creamy, transfer the filling into the crust.
Spread evenly.
Put it in the oven and bake for 10 minutes at 350 F.
After 10 minutes, reduce the temperature to 300 F and continue to bake for 40 minutes.
Once done, remove from the oven.
Garnish with berries and whipped cream.
Cut the cake into equal slices.

• garlic powder to taste

• 8 cups mixed cheese (shredded)
• 3 eggs
• 2 cups whole milk
• 1.5 cups heavy cream
Instructions:
Preheat oven to 375 F.
Pasta Mix
Add 3.5 cups of elbow pasta in a pot of boiling chicken stock.
Cook for 7-8 minutes.
Once done, drain and rinse the pasta.
Transfer the pasta into a bowl.
Add sliced butter.
Stir well until butter melts.
Add sour cream, then mix well to combine.
Season with paprika, onion powder, garlic powder and salt to taste.
Add 2 cups of mixed shredded cheese.
Mix well to combine.
Set aside.
Cream Mix
In a separate bowl, crack open three eggs.
Add whole milk and heavy cream.
Whisk to combine.
Set aside.
Assembly
Prepare a baking dish or any oven-proof pan of your choice.
Grease with butter.
Add 1/3 of the pasta mix and spread evenly.
Sprinkle 2 cups of mixed shredded cheese.
Pour 1/3 of the cream mix.
Do two more layers of pasta mix, mixed shredded cheese and cream mix.
Sprinkle paprika to taste.
Place inside the preheated oven.
Let it bake for 45 minutes to an hour.
Once done, remove from the oven.
Slice into equal portions.

Ingredients:
Crust
• 3 cups digestive cookie crumbs
• 1/2 cup butter (melted)
Cheese Filling
• 16 oz cream cheese (at room temperature)
• 1 1/4 cups sour cream (at room temperature)
• 3/4 cup sugar
• 1 1/2 tbsp lemon juice
• 3 tbsp all-purpose flour
• 1 tsp vanilla extract
Other Ingredients
• 3 large eggs
• preferred toppings (optional)
Instructions:
Preheat oven to 285 F.
Crust
Place digestive cookies in a food processor.
Push until it fine crumbs form.
Once done, transfer to a large bowl.
Add melted butter into the bowl.
Mix well to combine.
Transfer crust mixture into a 7-inch pan.
Spread it on the bottom and along the sides of the pan.
Press the crust on the bottom of the pan.
Place the pan inside the fridge for 30 minutes.
Cheese Filling
Prepare another mixing bowl.
Add cream cheese into the bowl.
Whisk using a handheld electric mixer until creamy.
Add sour cream, sugar, lemon juice, all-purpose flour, and vanilla extract.
Whisk using a handheld electric mixer.
Continue to whisk until well combined.
Set aside.
Prepare a separate bowl.
Crack open three eggs.
Lightly whisk the eggs.
Add to the cheese filling.
Fold until well combined.
Assembly
Remove the pan from the fridge.
Pour cheese filling into the pan of crust.
Spread evenly.
Place it inside the preheated oven.
Let it bake for an hour and 45 minutes or until the cheese filling has set.
Gently shake the pan to check the center of the fluffiness of the filling.
Once done, remove from the oven.
Let it cool completely.
Place in the fridge for at least 8 hours.
After 8 hours, remove the cheesecake from the pan.
Garnish with your preferred toppings.
Slice in equal portions.
