Lettuce wraps are a traditional Southeast Asian dish. The filling is typically made from a mixture of minced meat, herbs, and shredded vegetables while the dipping sauce has a mixture of sweet, sour, salty and spicy flavors. It is great low-carb food as the lettuce leaf replaces bread as the wrap, but still very filling. With this raw vegan recipe, walnuts, vegetables, and herbs are used instead of a typical meat-based filling. Instead of serving a dipping sauce on the side, the filling is mixed with the sweet, salty, spicy, and creamy sauce. These easy-to-prepare, delicious, and healthy lettuce wraps are perfect for any meal. They are also a great lunchbox, party or picnic food.
Ingredients:
This recipe takes about 20 minutes to make. Serves 6 to 8 wraps.
6 to 8 butter lettuce leaves
Sauce:
• 1 tbsp sesame oil
• ⅛ cup of nama shoyu
• 1 tsp red pepper flakes
• 1 tbsp hulled sesame seeds
• ¼ cup of raw wild honey
• 1 garlic clove, grated
• 1 tsp grated ginger
Meat Filling:
• 1 ½ cup of walnuts
• 1 cup of diced carrots
• 1 cup of diced celery
• ¼ cup of chopped scallions
• ¼ cup of chopped fresh cilantro
Garnish:
• mung beans
• grated carrots
Instructions:
Put sesame oil, nama shoyu, red pepper flakes, sesame seeds, honey, garlic, and ginger in a food processor. Blend until smooth and creamy.
Add in walnuts, carrots, celery, scallions, and cilantro.
Pulse just until the filling ingredients are minced and coated with the sauce.
Spoon enough filling into the lettuce leaves.
Finally, top with mung beans and grated carrots.
Ideas And Tips:
• Aside from butter lettuce, you can use romaine, iceberg, bibb, little gem, radicchio, mustard greens, perilla leaves, bok choy or Napa cabbage.
• You can substitute nama shoyu with liquid aminos.
• If you want to lessen the spiciness of the sauce, just put half of the red pepper flakes. You can also omit them entirely if you’re serving the wraps to kids.
• You can also add mushrooms, bell peppers, zucchini, cucumbers or turnips to the meat filling.
• You can serve the wraps with lime or lemon wedges or add some of the juice to the sauce.
