Vegan Chickpea Tuna Salad – Easy Healthy Lunch Ideas

It’s always been amazing how vegans use ingredients and seasonings to recreate the taste and texture of non-vegan recipes. Here is a vegan chickpea tuna salad recipe wherein, chickpeas are used to replace tuna chunks. To achieve the flavor and aroma of fish, this recipe uses kelp granules; a vegan umami seasoning. This recipe gives you two ways to enjoy this healthy lunchbox favorite; a sandwich and a wrap.


• ½ cup of diced carrots
• 2 tbsp nutritional yeast
• 1 tbsp tamari
• 1 tsp lemon juice
• 1 tbsp kelp granules
• 4 cups of cooked chickpeas
• 3 tbsp vegan mayo
• 3 tbsp minced dill pickle
• ¼ cup of finely chopped celery
• 4 toasted whole wheat bread slices
• 1 tomato, sliced
• ¼ cup of baby spinach
• mustard
• freshly ground black pepper
• 2 large collard greens
• 1 carrot, cut into sticks
• 1 pickle, sliced
• 1 red bell pepper, sliced


This recipe takes about 10 to 15 minutes to make. Serves 4 to 6.

Place carrots, nutritional yeast, tamari, lemon juice, kelp granules and chickpeas in a food processor.
Pulse just until the chickpeas are chopped up.
Mix vegan mayo, pickles, and celery in a bowl.
Add chickpea mixture into the bowl.
Gently mix to make sure the chickpeas are not mashed.

To build the vegan tuna salad sandwich, scoop “tuna” salad and spread it on top of a bread slice.
Spread mustard on the other bread slice.
Arrange baby spinach and tomato slices on top on the mustard.
Gently flip one bread slice over to cover the other.
Slice the sandwich diagonally and serve.

To make the egg salad wrap, start by trimming off the hard part of the stem of the collard greens.
Scoop egg salad and spread it on the back side of the collard green.
Arrange carrots, bell peppers, and pickles on top of the egg salad.
Fold the bottom of the leaf over to the center.
Fold 1 side of the leaf to enclose the filling, then roll the leaf to seal.

Ideas And Tips:

• You can use ground dried kombu sheets to substitute kelp granules.

• Aside from collard greens, you can also use Swiss chard, butter lettuce, kale or perilla leaves.
