Another addition to your vegan desserts list is vegan lemon bars. The mixture of something sweet and zesty lemon is a perfect treat for that brunch or weekend dinner with your family and friends.
Ingredients:
Crust:
• 1 cup raw sugar
• 2 cups Vegan margarine
• 4 cups all purpose flour
Topping:
• 1 cup lemon juice
• 1 cup raw sugar
• 3 tbsp agar flakes
• 1 1/3 cup water
• 1/2 tbsp all-purpose flour
Instructions:
Preheat oven to 350 F.
Prepare a 9 x 13-inch baking pan. Line and lightly grease.
For crust:
Put all-purpose flour and sugar in a mixing bowl.
Stir together.
Add melted vegan margarine.
Mix well until it becomes a dough.
Transfer to the baking pan.
Evenly spread and press the mixture on the sides.
Let it bake for 20 minutes or until it becomes lightly brown.
Remove from oven.
Set aside.
For toppings:
Set a medium saucepan over medium to high heat.
Put water and soak agar flakes for 15 minutes.
Add all-purpose flour with lemon juice.
Let it dissolve and boil for 10 minutes or until agar flakes are dissolved.
Reduce to medium heat.
Add a mixture of raw sugar and lemon.
Whisk until well combined.
Pour mixture to the pre-baked crust.
Refrigerate for 3 hours.
Remove from the baking pan.
Slice into squares and sprinkle powdered sugar.
Serve and enjoy!
