Fried corn is a very easy to cook recipe, which is perfect as a side dish. This vegan recipe highlights the simplicity yet flavorful corn. This can be served with your other favorites on a Sunday or weeknight get together with friends and family.
• 2 ears white corn (shucked)
• 2 tbsp coconut oil
• 1 tbsp chives (chopped)
• 1/2 cup onion (chopped)
• Salt and pepper to taste
This recipe takes 30 minutes. Serves 4.
Cut the kernels off the white corn.
Place them in a bowl.
Set a large skillet over medium-high heat.
Put the coconut oil and let it melt.
Add corn and stir.
Let it cook for 10 minutes.
Reduce heat to medium.
Sprinkle chives, then season with salt and pepper.
Cover and let it cook for 5-10 more minutes.
Remove and transfer to a bowl.
