Vegetable Soup (Delicious And Healthy!)
Cold winter days and nights call for a hot steaming soup. One great way to make a hearty and healthy soup is using an organic soup mix. Soup mix is sold in small bags and found in the soup aisle of the grocery stores. It is made of a mix of dried lentils, splits peas, barley, rice, millet, beans, chickpeas or garbanzo beans. To use it, you have to soak the soup mix overnight and drain before adding to your soup and cooking with the rest of the ingredients. This recipe gives you a delicious vegetable soup. The soup mix used is made with lentils, split peas and barley. You can serve the soup on its own or pair it with a crusty bread.
Ingredients:
• 2 potatoes, diced
• 2 carrots, diced
• 1 parsnip, diced
• 1 small turnip, diced
• 1 celery stalk, diced
• 1 small onion, diced
• 4 cups of stock
• 1 can of diced tomatoes
• 1 tbsp garlic-infused olive oil
• 4 cups of rehydrated soup mix
• 2 cups of water
Instructions:
This recipe takes about 50 minutes to make. Serves 8 to 10.
Heat pot over medium heat.
Drizzle garlic-infused olive oil.
Add all the vegetables, potatoes, carrots, parsnip, turnip, celery stalk, and onion.
Cook while stirring constantly for 2 to 3 minutes.
Add canned tomatoes and cook for 2 to 3 minutes.
Add soup mix and stir for a minute.
Pour in stock and water and let the soup boil.
Cover the pot with a lid and turn heat down to low.
Simmer for 30 minutes.
Pour into soup bowls and serve.
