Veggie Fried Rice | Quick + Easy Pantry Recipe

Veggie fried rice is a quick and easy rice meal that you can prepare for lunch or dinner. You can simply use day-old rice, some frozen or fresh vegetables and eggs. This recipe is adjustable according to your preference and the available ingredients. You can add more veggies for a more colorful and tasty fried rice. It only takes about 10 minutes to prepare and cook this recipe.

Ingredients:

• 1 tbsp vegetable oil
• 1 yellow onion (finely diced)
• 1 clove garlic (minced)
• 1.5 cups frozen mixed vegetables
• 1 cup shelled edamame
• 2 beaten eggs
• 3 cups leftover or cooked rice
• 2 tbsp soy sauce

Instructions:

Set a large skillet over medium-high heat.
Add 1 tbsp of vegetable oil and heat it.
Saute diced yellow onion until soft.
Add minced garlic.
Stir and cook for 30 seconds.
Add frozen mixed vegetables and edamame.
Stir and mix until vegetables are tender.
Move the veggie mixture on one side of the skillet.
Add beaten eggs to the space.
Scramble it, then mix with the rest of the vegetables.
Add leftover or cooked rice into the skillet.
Mix well to combine.
Drizzle soy sauce over the fried rice mixture.
Stir for 1-2 minutes or until well incorporated.
Switch off the heat.
Transfer to a plate.
Serve and enjoy.

Tips and ideas:

Add more vegetables such as broccoli, mushrooms or tomatoes in the mixture if you prefer.
