White strawberry tart is a perfect afternoon snack or dessert idea. It is a baked dish that primarily consists of pastry and custard cream. A generous layer of halved white strawberries is then added as toppings. You can also add some whipped cream for additional topping.
Ingredients:
Dough:
• 60 grams butter (softened)
• 30 grams powdered sugar
• 1 egg yolk
• 100 grams cake flour
Custard Cream:
• 250 grams milk
• 20 grams + 40 grams sugar
• 3 egg yolks
• 20 grams cornstarch
• 1 tsp vanilla extract
Almond Cream:
• 40 grams butter (softened)
• 30 grams powdered sugar
• 1 beaten egg
• 6 grams cornstarch
• 60 grams almond flour
• 16 white strawberries (sliced in half)
• some whipped cream (optional for toppings)
Instructions:
Dough:
Prepare a mixing bowl.
Add softened butter.
Sift in powdered sugar.
Mix until well combined.
Add an egg yolk.
Sift in cake flour.
Mix until well combined.
Transfer the mixture into a clingfilm.
Wrap it around tightly and place it in the fridge to chill.
Custard Cream:
Prepare a small pot.
Add 250 grams of milk and 20 grams of sugar.
Set the pot over medium heat.
Stir well to combine.
Bring to a boil.
In a mixing bowl, add three egg yolks and 40 grams of sugar.
Whisk to combine.
Add 20 grams of cornstarch.
Whisk to combine.
Add half of the boiled milk mixture into the yolk mixture.
Whisk to combine.
Add the rest of the boiled milk mixture, then whisk to combine.
Pour the mixture into the same pot.
Set it over medium heat.
Continue to whisk until the mixture turns into a smooth and soft cream.
Add 1 tsp of vanilla extract.
Whisk to combine.
Once well incorporated, remove from the heat.
Transfer into a bowl.
Cover it with a plastic wrap and place it in the fridge to chill.
Almond Cream:
In a mixing bowl, add 40 grams of softened butter and 30 grams of powdered sugar.
Mix until well combined.
Add half of the beaten egg, then mix to combine.
Add 6 grams of cornstarch, then mix to combine.
Add 60 grams of almond flour, then mix to combine.
Add the remaining beaten egg.
Mix well to combine.
Set aside.
Assembly:
Preheat oven to 180 C.
Dust a work surface with some flour.
Remove the dough from the fridge and lightly knead it on the work surface.
Flatten it using a rolling pin.
Make it into a wider dough than the tart mold.
Put the dough into the tart mold and cut off excess.
Poke holes on the dough and press firmly along the sides of the mold.
Spread almond cream into the mold evenly.
Place it inside the preheated oven.
Let it bake for 25-30 minutes.
Once done, remove from the oven.
Remove the custard cream from the fridge.
Using an electric hand mixer, beat the custard cream to soften.
Fold the mixture, then transfer it into a piping bag.
Pipe it on the top of the tart.
Top it off with halved white strawberries to decorate.
You can also add whipped cream for additional topping.
Serve and enjoy!
