Chipotle Veggie Taco Salad Bowl

This is a great recipe for any Chipotle lover. It is packed with flavours and super healthy. It has lots of vegetables that will provide you with vitamins and minerals, and the beans in it will make you feel full by giving you all the nutrients you need for hours.

Ingredients:

Salsa:

• 1/3 cup of chopped tomatoes
• 1 tablespoon of chopped red onions
• 1 tablespoon of chopped cilantro
• juice of two orange slices

Salad:

• 2 cups of romaine lettuce
• 1 cup of pinto beans
• 1 tablespoon of ground cumin
• 1 tablespoon of water
• 1/2 cup of sliced red onions and bell peppers
• 3 cloves of sliced garlic
• 1 tablespoon of chili powder
• 1 teaspoon of olive oil
• salt and pepper to taste

Instructions:

Heat the olive oil in a pan and cook onions, peppers, and garlic for 3-4 minutes.
Add chili powder and cook for a couple more minutes.
Remove from the pan and set aside.
Add the water to the same pan and when it boils, add cumin and beans.
Cook for 5 minutes.
Combine all the salsa ingredients in a bowl and set aside.
Combine lettuce with the cooked ingredients.
Top with the prepared salsa.

Tips and ideas:

Great thing about this dish is that you can add any other veggies that you want.

You can also add your favourite salad dressing for more flavour.
