1. Kale + Cabbage Crunch

Ingredients:

• 4 cups of kale
• 3 cup of red cabbage, chopped into thin strips
• 4 carrots, chopped
• 1 avocado, diced

Dressing:

• 2 tbsp of extra virgin olive oil
• Half a cup of apple cider vinegar
• 1 clove of garlic, crushed
• 1 tsp of honey
• Salt
• Pepper

Instructions:

Serves 4.

In a large bowl, add all of the salad ingredients.
In a separate bowl, whisk together all the ingredients for the dressing.
Pour the dressing onto the salad and mix well.

2. Chunky Greek Salad

Ingredients:

• 4 small Persian cucumbers
• 1 cup of baby tomatoes
• 1 cup of garbanzo beans
• 1/4 cup of red onion
• Half a cup of kalamata olives

Dressing:

• 2 tbsp of extra virgin olive oil
• 3 tbsp of balsamic vinegar
• 1 tsp of dried oregano
• 1 clove of garlic, crushed
• Salt
• Pepper

Instructions:

Serves 2 to 4.

Mix all the ingredients for the dressing and pour over the salad. Mix well.

3. Quinoa + Black Bean Salad

Ingredients:

• 2 cups of cooked quinoa
• 1 cup of black beans
• 1 up of red bell pepper
• 1 avocado
• 1/3 cup of scallions

Dressing:

• 2 tbsp of extra virgin olive oil
• 1/4 cup of lime juice
• 1 clove of garlic, crushed
• 1/8 tsp of ground cumin
• Salt
• Pepper

Instructions:

Serves 2 to 4.

Mix all of the ingredients for the dressing and pour over the salad.
Adjust seasoning according to taste.
