4 Healthy Scrambled Egg Recipes | Easy + Delicious Breakfast Ideas

Here are four healthy ways to prepare the delicious breakfast staple scrambled egg! For those who love goat cheese, you can mix it with scrambled eggs and add some herbs. You will also be delighted with the Asian-inspired scrambled eggs mixed with chili garlic and soy sauce. Try a mix of cheese and spicy-flavored scrambled egg with the Mexican-inspired recipe. You can also mix scrambled eggs with Italian sausage and baby spinach. Choose any of these four varieties to create a healthy and exciting breakfast!




1. Herb And Goat Cheese Scrambled Eggs

Ingredients:

• 4 eggs
• 2-3 tbsp milk
• 1 tbsp butter
• 1/4 cup goat cheese (crumbled)
• 1 tbsp fresh parsley (chopped)
• 1 tbsp fresh basil (chopped)
• 1 tbsp fresh chives (chopped)
• salt and pepper to taste

Instructions:

In a bowl, crack open four eggs.
Add 2-3 tbsp milk.
Whisk until well combined.

Set a non-stick pan over medium heat.
Melt 1 tbsp of butter.
Once it melts, pour the egg mixture into the pan.
Scramble until it’s almost cooked.
Add 1/4 cup of crumbled goat cheese and stir to combine.
Add chopped parsley, basil, and chives.
Stir to combine.
Season with salt and pepper to taste.
Stir for 1-2 minutes or until the egg mixture is cooked.
Remove from the heat.
Serve with toasted bread and mixed berries.

2. Asian-Inspired Scrambled Eggs




Ingredients:

• 4 eggs
• 2-3 tbsp milk
• 1 tbsp butter
• 2 green onions (sliced thinly)
• 1/2 tsp chili garlic sauce
• 1/2 tsp soy sauce
• 1/2 tsp sesame seeds (for garnishing)

Instructions:

In a bowl, crack open four eggs.
Add 2-3 tbsp milk.
Whisk until well combined.
Set aside.

Set a non-stick pan over medium heat.
Melt 1 tbsp of butter.
Saute sliced green onions for a minute.
Add the egg mixture into the pan.
Scramble until it’s almost cooked.
Season with soy sauce and chili garlic sauce.
Stir until well combined and egg mixture is cooked.
Remove from the heat and transfer to a plate.
Garnish with sesame seeds and green onions.
Serve with toasted bread and sauteed veggies.
Enjoy!

3. Mexican-Inspired Scrambled Eggs

Ingredients:

• 4 eggs
• 2-3 tbsp milk
• 1 tbsp butter
• 1/8 yellow onion (finely diced)
• 1/2 jalapeno (minced)
• 1/4 cup cheddar cheese (shredded)
• 1 tbsp fresh cilantro (chopped)

Instructions:

In a bowl, crack open four eggs.
Add 2-3 tbsp milk.
Whisk until well combined.
Set aside.

Set a non-stick pan over medium heat.
Melt 1 tbsp of butter.
Saute finely diced yellow onion for 2 minutes or until the onion is soft.
Add minced garlic and jalapeno.
Saute for 30 seconds or until fragrant.
Add the egg mixture into the pan.
Scramble until it’s almost cooked.
Add shredded cheddar cheese and chopped cilantro.
Stir until well combined and egg is cooked.
Remove from the heat and transfer to a plate.
Serve with toasted bread and your preferred side dish.

4. Italian Sausage Scrambled Eggs

Ingredients:

• 4 eggs
• 2-3 tbsp milk
• 1 tbsp oil
• 2 hot Italian sausages
• 1 tbsp Parmesan cheese (grated)
• 1/2 tsp Italian seasoning
• 1/4 cup roasted red peppers (diced)
• salt and pepper to taste
• 1 cup baby spinach (chopped)

Instructions:

In a bowl, crack open four eggs.
Add 2-3 tbsp milk.
Whisk until well combined.
Set aside.

Set a non-stick pan over medium heat.
Add 1 tbsp oil and heat it.
Remove the sausage from its casing and add it into the pan.
Stir and cook until sausage changes color.
Add chopped baby spinach and diced roasted red peppers.
Stir and cook until spinach is wilted.
Once spinach wilts, move the mixture over one side of the pan.
Pour the egg mixture on the other side of the pan.
Season with 1/2 tsp of Italian seasoning, salt, and pepper to taste.
Scramble until it’s almost cooked.
Stir all the mixture together until well combined and cooked.
Remove from the heat and transfer to a plate.
Garnish with grated Parmesan cheese while still hot.
Serve and enjoy!
