1. Pizza Sandwich

Ingredients:

• 1/2 cup red onion (chopped)
• 1/2 cup capsicum (chopped)
• 1/2 cup tomato (chopped)
• 1/2 cup pizza sauce
• 1/4 tsp salt
• 1/4 tsp black pepper
• 1/4 tsp dried oregano leaves
• 1 tsp butter
• 4 bread slices
• 150 grams mozzarella cheese (shredded)

Instructions:

Set a frying pan over medium-high heat.
Add butter and melt it.
Once melted, add chopped red onion, capsicum, and tomato.
Season with salt, black pepper, and dried oregano.
Stir and cook until vegetables are tender.
Remove from the heat, then set aside.

Toast the bread slices.

Assembly:

Spread 3 tbsp of pizza sauce on a bread slice.
Sprinkle shredded mozzarella cheese.
Get a spoonful of the vegetable mixture and spread evenly on the bread.
Top it off with shredded mozzarella cheese.
You can sprinkle on dried oregano leaves if you prefer.
Do this with the remaining bread slices and ingredients.
Microwave for 1-2 minutes or until cheese has melted.

Ingredients:

• 1 cup flour
• 3/4 cup sugar
• 1 tsp baking powder
• 1/8 tsp salt
• 14 cup oil (or butter as alternative)
• 1 egg

• 1/4 cup milk

Instructions:

Prepare a mixing bowl.
Sift in flour, sugar, baking powder, and salt.
Set aside.

Prepare another mixing bowl.
Add oil, egg, and vanilla essence.
Whisk for a minute until well combined.
Add milk.
Whisk to combine.
Add half of the flour mixture.
Whisk until well combined.
Add the rest of the flour mixture.
Whisk to combine until the batter is smooth.

Grease a pancake maker.
Add batter into each pancake mold.
Cook for a minute.
Flip on the other side and cook for another minute.

Ingredients:

Chicken Cheese Filling:

• 500 grams chicken (boneless, skinless, and chopped)
• 1.5 cups mozzarella cheese or more (grated)
• 1 tsp salt
• 1 tsp red chili powder
• 1/2 tsp black pepper
• 1/2 tsp turmeric powder
• 1/2 tsp cumin powder
• 1 tsp ginger-garlic paste
• 1/2 tbsp lemon juice (or vinegar as alternative)
• 2 tbsp oil
• 1 medium white onion (chopped)

Batter:

• 1 cup flour
• 2 eggs
• 1 cup milk
• 2 tbsp unsalted butter (melted)
• 1/4 tsp salt

• 1-2 tsp oil

Instructions:

Chicken Cheese Filling:

Prepare a mixing bowl.
Add chopped chicken.
Add the seasonings – salt, red chili powder, black pepper, turmeric powder, and cumin powder.
Add ginger-garlic paste, lemon juice, and oil.
Mix well.
Marinate for 30 minutes.

Set a frying pan over medium heat.
Add the chicken mixture.
Stir and cook for 10 minutes or until the chicken is tender.
Add chopped white onion.
Stir and cook for 2 minutes.
Remove from the heat, then transfer to a bowl.
Let it cool.
Add grated mozzarella cheese into the bowl.
Mix well.
Set aside.

Batter:

Prepare a mixing bowl.
Sift in flour and salt.
Add eggs and melted butter.
Whisk until well combined.
Add milk, then mix to combine until there are no lumps.
Use a handheld electric mixer to mix until the batter is smooth.

Sift in all-purpose flour, white sugar, baking powder, and salt.

Prepare another mixing bowl.
Add warm milk, vanilla extract, melted butter, and egg.
Whisk to combine.
Add half of the flour mixture into the wet ingredients.
Whisk well to combine.
Add the rest of the flour mixture.
Whisk until the batter is smooth.
Let it rest for a minute.

Set a non-stick frying pan over medium-high heat.
You can add some butter or not.
Pour 1/4 cup of the batter into the pan to make a pancake.
Let it cook until the bottom is light golden.
Flip on the other side.
Let it cook until light golden.
Remove from the pan and transfer to a plate.
Do this with the rest of the batter.
Serve with butter and honey.
