Raw Cheesy Kale Chips – Lunchbox Snack

Craving for something crunchy but you don’t want to reach for those store-bought snacks? These cheesy kale chips are crunchy, cheesy, and 100% healthy! No MSG, no cooking, and no artificial flavors. These are great snacks while watching the game of your favorite team, enjoying a movie at home, or packed up as gifts to friends and family.

This recipe takes about 8 to 10 minutes to prepare. Serves 2 to 3.

Ingredients:

• 2 to 3 big bunches of kale
• 4 tbsp of nutritional yeast
• 1.5 tsp of turmeric
• 3 tsp of onion powder
• 1 tsp of garlic powder
• 5 tsp of salt
• 1 cup of olive oil
• 2 cups of water
• 4 cups of cashews, soaked in water for 2 hours

Instructions:

In a food processor, add the cashews, water, nutritional yeast, turmeric, garlic, onion, and salt.
Pour the oil gradually into the mix.
To remove the kale leaves from the stem, hold the stem with one hand, and slide your hand downwards to get the leaves.
In a very big bowl, pour the cashew mixture on your kale leaves. Use your hands to coat each leaf.
Place the coated kale on dehydrator sheets.
Let the kale leaves sit until they become dry and crispy. If some of the ends are still wet, turn them over on the dehydrator.

Ideas And Tips:

• Add more turmeric to get that yellow cheesy look on the kale.

• Set aside the kale stems. These can still be used for making kale juice or smoothies.

• You can tear the leaves into your preferred size. Make sure to coat all the leaves with your cashew mixture for that delicious cheesy flavor.

• By making a bigger batch of the marinade, you can set it aside in the fridge and use it as a salad dressing or spread it on bread.

• Instead of using a dehydrator, you can also place these kale leaves on a pan, put your oven on the lowest setting, and place the pan inside with the oven door open. Make sure that the temperature does not go above 180C. Check the kale leaves regularly and remove them once they turn crispy.
