Cauliflower is an annual plant that reproduces from seeds and grows best in cool daytime temperatures with abundant sunlight and moist soil. The head is the edible portion of the plant. It resembles that of broccoli but differs in color, texture and of course flavor of the edible flower buds.
Cauliflower is rich in phytochemicals and has a high level of anti-inflammatory compounds. It has been attributed some ability to fight cancer cells, heart disease, and brain disease. As it low in calories and rich in fiber, it also aids in weight loss when integrated into a healthy diet.
This interesting recipe uses cauliflower for the pizza crust! A much healthier way to enjoy your favorite pizza without too much carbohydrates than the regular pizza crust. You also do not need to wait for the crust to rise. The dough is baked in the oven immediately after it is prepared. It is best topped with fresh greens such as alfalfa sprouts, arugula or basil before serving.
Ingredients:
Crust:
• 1 large cauliflower
• 2 tbsp chia seeds
• 8 tbsp water
• ½ cup of apple puree
• ¼ cup of ice cold water
• 1 tbsp tamari
• juice of 1 lemon
• 1 cup of buckwheat flour
• salt
Toppings:
• tomato puree
• sliced tomatoes
• sweetcorn
• sliced mushrooms
• fresh basil leaves
• salt
• pepper
Instructions:
This recipe takes about 45 minutes to make. Serves 1 pizza.
Put chia seeds and water in a bowl and let the mixture sit for 10 minutes.
Slice off the green stems from the cauliflower.
Put the cauliflower into a food processor and pulse until it’s all crumbled up.
Place the cauliflower in a nut bag.
Squeeze the bag to drain out excess water.
Put drained cauliflower into a large bowl.
Add apple puree, lemon juice, tamari, pepper, salt, water, and buckwheat flour.
Mix well until everything comes together.
Pour in soaked chia seeds.
Mix to finish the dough.
Grease then flour a pizza tray.
Evenly spread dough on the pizza tray.
Bake in the oven at 200°F for about 30 minutes.
To assemble the pizza, spread tomato puree on the crust.
Arrange all the vegetables on top of the sauce.
Sprinkle salt and pepper on top.
Put it back in the oven and bake for another 5 minutes.
Slice and serve.

• You can use brown rice flour instead of buckwheat flour.
• Add cheese if desired.
