Blackening is a cooking method in which the food like meat, poultry or fish is dipped in melted butter, then rubbed with a blackening spice mix before frying in oil in a very hot cast-iron skillet. There is no standard recipe for the blackening spice mix but, it usually includes salt, pepper, onion powder, garlic powder, paprika, chili powder, oregano, and thyme. When blacking is done properly, the result is a spicy, crispy, attractively dark crust that gives way to a tender and juicy center. This cooking method originated in New Orleans and was innovated, perfected and popularized by Chef Paul Prudhomme in the 80s.
In this blacked fish recipe, instead of dipping in melted butter, the fish fillets are directly rubbed with the spice mix, then fried in a mixture of butter and olive oil. This cuts the amount of butter and oil in the dish without ruining the taste and texture. You still get fish fillets with a delectable spicy dark crust and a moist and tender interior. These fish fillets are perfect with rice or steamed vegetables.
Ingredients:
This recipe takes about 10 to 15 minutes to make. Serves 2.
• 2 (4-ounce) mahi-mahi fillets
• ½ tsp salt
• ¼ tsp ginger powder
• ¼ tsp paprika
• ¼ tsp chili powder
• ¼ tsp garlic powder
• ½ tbsp butter
• ½ tbsp olive oil
Instructions:
Pat the fish fillets dry using a paper towel.
Rub all sides with salt, ginger powder, paprika, chili powder, and garlic powder.
Melt butter in a skillet or non-stick pan over medium-high heat.
Pour olive oil into the pan and gently swirl the pan to mix the butter and olive oil.
Gently slide the fish fillets into the pan.
Cook for 2 minutes on each side.
Transfer blackened fish fillets to a serving dish.
Ideas And Tips:
Aside from mahi-mahi, you can use tilapia, catfish, sea bass, Baja fish, pomfret, salmon, red snapper, bream or pollock.
To get an evenly seasoned fish, you can mix the salt and spices together in a small bowl first before rubbing them to the fish fillets.
If the blackening seasoning is too spicy for you, you can use black pepper instead of chili powder.
