Mushroom burgers are meaty, juicy, and healthy. This mushroom burger recipe is very simple and does not need a lot of ingredients. It is also great because you can make the burger patties the night before, and cook them the next day.
Serves 4 to 6 burgers.
Ingredients:
• 4 tbsp of olive oil
• 1.5 lb. of mushrooms
• Half of an onion, chopped
• 4 cloves of minced garlic
• 2/3 cup of rolled oats
• Half a cup of shredded Parmesan cheese
• 3/4 cup of breadcrumbs
• 2 beaten eggs
• Half a tsp of dried oregano
• 1 tsp of salt
• Half a tsp of black pepper
Instructions:
Slice the mushrooms.
Over medium heat, sauté the mushrooms with onion, 2 tbsp of olive oil, and garlic.
Add oregano. Sauté until the liquid from the pan dries up.
Remove from the heat and chop the mushrooms finely.
In a bowl, add rolled oats, breadcrumbs, salt, and black pepper. Mix together.
Add Parmesan cheese and beaten eggs. Mix well and set aside for 15 to 20 minutes.
Use hands to form burger patties.
Fry burger patties for 5 to 6 minutes on each side.
Serve with burger buns and garnish with burger condiments.

• The burger patties can sit in the fridge overnight, and then you can cook them the next day. If you plan to cook this for a party the next day, you can definitely make these in advance and saves you time.
• You can remove the eggs from this recipe to make this 100% vegan. You can substitute eggs with applesauce, mashed bananas, ground flax seeds mixed with water, or canned pumpkin. There are also egg replaces available in stores.
