Yu Sang or Yu Sheng is a popular Chinese dish specifically served during Chinese New Year in Singapore and Malaysia. It highlights the colorful vegetables and tasty seasonings mixed into the salad. This dish is best served with family and friends and a great way to welcome the year ahead as it symbolizes abundance.
Ingredients:
• Smoked Salmon (which can be bought from a store)
• Carrots (shredded)
• Radish (shredded)
• Cucumber (shredded)
• Pickled ginger
• Lime
• Taro (julienned)
• Oil for frying
• Pomelo (shredded)
• Food coloring
For the dressing or sauce:
• 2 Tbsp plum sauce
• 1 Tbsp water
• 1 teaspon sesame oil
For the crackers:
• 1 Tbsp water
• 30 grams butter
• 2 teaspoon salt
• 50 grams flour
To be added later on when the dish is served:
• 1 teaspoon sesame seeds
• 1 Tbsp olive oil
• 1 Tbsp roasted peanuts (crushed)
• 1 teaspoon five spice powder
• 1/2 teaspoon pepper
Instructions:
For the dressing or sauce:
Mix all the ingredients.
Stir well.
Set aside.
Dough for the crackers:
In a medium-sized mixing bowl, pour flour, salt, and butter.
Mix well.
Add water and mix again until sticky.
Flatten the dough.
Cut into small rectangles
Set sauce pan over medium heat.
Pour oil.
Place the cut dough in the pan and let it fry until golden brown.
Transfer to a plate and set aside.
For the julienned Taro:
Divide the strips into two portions.
Pour food coloring in each respectively and mix well.
Fry the taro slices over medium heat.
Transfer to a plate and set aside.
For assembling the salad:
Arrange all the shredded fresh ingredients including the fried taro and crackers on a plate.
Add the smoked salmon pieces at the center of plate.
Put a lime wedge on the side.
Top it off with crushed roasted peanuts, sesame seeds, olive oil, five spice powder, and plum sauce.
Mix it up and serve.
