Salt Cod fish fritters is a popular Jamaican appetizer. This is a very quick and easy go-to recipe you can enjoy!
Ingredients:
• 6 ounces Boneless salted cod
• 1 large tomato (chopped)
• 1 Jamaican hot pepper (chopped)
• 1 medium green bell pepper (chopped)
• Medium onions (chopped)
• Scallions
• 2 cups of all-purpose flour
• 2 cups water
• Ground black pepper
• Canola oil for frying
Instructions:
Boil the salted cod for 5 minutes.
Drain and rinse.
Repeat boiling for the second time.
Transfer to a bowl.
Shred the fish meat into tiny pieces.
Mix all the chopped ingredients.
Pour 2 cups of water (you may want to add later for consistency).
Add in the all-purpose flour.
Mix well.
Sprinkle ground black pepper and stir well.
Set pan over medium-high heat.
Pour canola oil and let it heat.
Place the fritters by just scooping the mixture with a spoon.
Let it fry for 3-4 minutes on each side or until golden brown.
Transfer to a plate and serve.
Tips and ideas:
You can add ground black pepper if you want more taste to it.
Make sure the canola oil is hot before frying to avoid fritters sticking in the pan.
You can serve with mayonnaise or any spicy sauce for dipping.
