One of the favorite desserts that are usually homemade is lemon bars. It requires only a few ingredients and is very easy to prepare. Shortbread like crust and a tasty lemon filling will complete your weeknight bonding with the family.
Ingredients:
For Crust:
• 3/4 cup whole wheat flour
• 1/3 cup coconut oil
• 1/4 cup maple syrup
• 1/4 tsp kosher salt
For Filling:
• 6 eggs
• 1 tbsp + 1 tsp lemon zest
• 4 tsp coconut flour
• 1/4 tsp kosher salt
• 1/3 cup honey
• 1/2 cup lemon juice
Instructions:
For Crust:
Preheat oven to 350 F.
Mix whole wheat flour, coconut oil, maple syrup, and kosher salt in a mixing bowl.
Mix until it forms a wet yet firm consistency.
Prepare a ceramic baking dish (preferably 8×8 inches) lined with parchment paper.
Pour the mixture into the baking dish.
Spread it evenly on sides and corners.
Let it bake for 20 minutes or until lightly browned and set through.
Set it aside and let it cool.
For Filling:
Mix eggs, lemon zest, lemon juice, honey, kosher salt, and coconut flour in a large mixing bowl.
Mix using a hand mixer until well combined.
It will form as a liquid batter.
Pour over the baked crust.
Let it bake for 30 minutes.
Remove and let it cool.
Put in the fridge for 4 hours or until chilled.
Cut into bite-size slices.
Sprinkle with powdered sugar (this is optional).
Serve and enjoy!
Tips and ideas:
You can use softened butter as an alternative if you don’t have coconut oil.
