Authentic Chinese Stir Fry Tofu And Mushrooms In Oyster Sauce

Tofu is very popular throughout Asia. There are many stories surrounding the origins of this Chinese soy product. A very interesting one is a man who invented tofu out of much love for his parents. As his parents have gone old and could no longer chew, he blended soybeans and make them into a soup. As he left the soup to cool, he discovered it had gone jelly-like. He then decided to pass the soup through muslin squares which gave birth to soft and moist soybean curds. Tofu barely contains any calories that’s why women in the East like to eat lots of tofu to help them lose weight. In the West though, not many people know how to cook tofu correctly.

With this recipe, you will be able to make an authentic Chinese stir-fry tofu and mushrooms in oyster sauce. What’s great is that this dish is very easy and quick to prepare. You don’t need to spend too much time and effort to serve a budget-friendly, delicious, and healthy one-pot dish to your family:

Ingredients:

• 1 pound of firm tofu, cut into 1″ cubes
• 1 8-oz can of whole button mushrooms
• 1/2 cup of chopped green onions
• 1 tbsp minced ginger
• ½ cup of green peas
• 2 tbsp cooking oil
• 1 tbsp tapioca starch
• ¼ cup of water

Sauce:

• ¼ cup of chicken stock
• 2 tbsp oyster sauce
• 1 tbsp light soy sauce
• 1 tbsp rice wine
• 1 tbsp sesame oil

Instructions:

This recipe takes about 20 minutes to make. Serves 3 to 4.

Pre-mix the sauce by whisking together chicken stock, oyster sauce, light soy sauce, rice wine, and sesame oil in a liquid measuring cup.
In a small bowl, dilute tapioca starch in water.
Heat oil in a wok over high heat.
Sauté ginger for about 20 seconds.
Add green peas and mushrooms, then stir-fry for 30 seconds.
Pour in sauce mixture, then add tofu and half of the chopped green onions.
Once the sauce boils, cover the wok with a lid.
Turn the heat down to low and simmer for 10 minutes.
Take the lid off and pour in starch mixture.
Gently mix to thicken the sauce.
Turn off heat.
Serve on a plate, topped off with more chopped green onions.

Ideas And Tips:

• You can add other vegetables such as carrots, bell peppers, turnips, baby corn, snow peas or chayote.

• You can also fry the tofu cubes first to remove some of the moisture and absorb more flavor from the sauce.
