How To Make A Vegan Pulled BBQ Mushroom Sandwich

Being vegan does not mean you should miss out on great tasting food. Let us show you how to make an absolutely delicious vegan pulled bbq mushroom sandwich. This recipe uses king oyster mushrooms, which are smoked using apple wood chips. They are then shredded and sautéed in bbq sauce to make them really tasty. What makes the sandwich even more delicious is the “kale slaw” with a tangy and spicy dressing. These sandwiches are also perfect for a picnic, camping, tailgate party or game day:


• 2 cups of soaked apple wood chips
• 1 pound of whole king oyster mushrooms
• 3 tbsp vegetable oil
• 1 cup of BBQ sauce
• 4 sandwich rolls

Kale Slaw:

• 1 head kale, finely sliced
• 2 carrots, peeled and grated
• 1 red onion, julienned
• 1 cup of vegan mayonnaise
• 4 tbsp sugar
• ½ cup of apple cider vinegar
• 1 tbsp crushed red pepper flakes


This recipe takes about 45 to 50 minutes to make. Serves 6.

Preheat the grill to 600°F and 700°F.
Place apple wood chips in a smoking box and put the box on the hottest part of the grill.
After 15 minutes, the wood chips will start to smoke.
Place mushrooms on the top rack of the grill and put the lid down.
Let the mushrooms cook for 20 to 30 minutes. Keep an eye on them so they don’t burn.
To makes the kale slaw, put kale, carrots, and onions in a large bowl.
In a separate bowl, whisk together vegan mayonnaise, sugar, apple cider vinegar, and crushed red pepper flakes.
Pour dressing on the vegetables and using clean hands, mix to make sure that all the vegetables are coated with the dressing.
Set kale slaw aside while you prepare the mushrooms.
Using a fork, shred the smoked king oyster mushrooms.
Heat oil in a pan over medium heat.
Add mushrooms and bbq sauce.
Sauté for 3 to 5 minutes.
To assemble the sandwich, spoon kale slaw on the bottom half of the sandwich roll.
Top off with the pulled bbq mushrooms, then cover with the top half of the sandwich roll.

Ideas And Tips:

• You can also use cherry, hickory or maple wood chips. The wood chips need to soak in water for 30 minutes before using them.

• You can also use cabbage or lettuce for the slaw.
