Turkish delight or also known as lokum is a confection made purely on a gel of cornflour or starch and sugar. Over the years, the flavors widen its variety from dates to pistachios to walnuts. Traditionally, the lokum is flavored with lemon or vanilla extract.
Ingredients:
• 4 cups sugar
• 1 cup cornflour or corn starch
• 1 teaspoon cream of tartar
• 2 teaspoons lemon juice
• Water
• 1 teaspoon vanilla extract
• Food color
• 1/2 cup powder sugar
Instructions:
In a medium pan, put 4 cups of sugar, 2 1/2 cups of water, and 2 teaspoons of lemon juice.
Set the pan over low heat.
Stir well and bring to a boil.
Bring the mixture to soft ball consistency.
Switch off the heat.
Set aside.
In a separate pan, put 1 cup of cornflour and 1 teaspoon of cream of tartar.
Add 3 cups of water.
Mix the ingredients until well combined.
Set the pan over low heat.
Stir continuously until the mixture turns to a thick paste.
Gradually pour the sugar syrup little by little while stirring constantly.
Cook on low flame for 40-45 minutes.
Stir frequently.
Let it cook until the mixture turns into golden color.
Switch off the heat.
Add 1 teaspoon of vanilla essence and a few drops of food coloring.
Mix until well combined.
Prepare a baking dish or any container.
Brush with oil and line with parchment paper.
Pour the cooked mixture carefully.
Set it overnight.
In a mixing bowl, add 1/2 cup of powdered sugar and 1/4 cup of cornflour.
Mix until well combined.
Sprinkle a small amount of mixture on a flat surface board.
Place the molded mixture to the surface.
Cut into small squares.
Toss into the mixing bowl and coat the squares.
Serve and enjoy!
