These delicious bacon, egg, and toast cups are a fantastic brunch idea! They have a combination of crispy bacon and soft egg in a buttered bread cup. This recipe takes about 30-35 minutes and makes six toast cups.
Ingredients:
• 8 white bread slices
• 6 bacon slices
• 3 tbsp unsalted butter (melted)
• 6 eggs
• salt to taste
Instructions:
Preheat oven to 375 F.
Flatten the bread slices.
Cut each bread slice into rounds by using a 4-inch round cutter.
Cut the round bread pieces into halves.
Set aside.
Cook the bacon slices in a frying pan.
Once cooked, drain excess oil.
Set aside.
Prepare a 6-cup muffin tray.
Grease each cup with melted butter.
Line each cup with two halves of bread to make a “cup”.
If there is a hole on the bottom, get a piece of the extra bread to cover it.
Brush the bread cups with melted butter.
Place a bacon slice in each bread cup, letting the edges overhang.
Crack open one egg in each bread cup.
Season each with salt.
Place inside the preheated oven.
Let it bake for 20 minutes or until egg whites are set.
Once done, remove from the oven.
Remove each bacon and egg cup from the muffin tray, then serve.
Enjoy!
