Baked spaghetti and mozzarella is a very satisfying dish that will make everyone at your table happy and full. It is a perfect centerpiece on your family weekend get-together. You can serve it with your favorite roasted or mashed potatoes.
Ingredients:
• 3/4 lb spaghetti pasta
• 3/4 lb fresh mozzarella (cut into 1/2-inch pieces)
• 2 cups basil leaves
• 2 cans whole peeled tomatoes
• 2 tbsp extra virgin olive oil
• 2 garlic cloves (crushed and peeled)
• Salt
Instructions:
This recipe takes about 1 hour. Serves 4-6.
Preheat oven to 400 F.
Pulse tomatoes in a food processor until blended well.
Set aside.
Set a large skillet over medium-high heat.
Heat olive oil.
Saute crushed and peeled garlic cloves for a minute.
Add the pulsed tomatoes.
Let it cook for 10-12 minutes or until the sauce thickens.
Remove from heat.
Set aside.
Set a large pot over medium-high heat.
Put salted water and bring to a boil.
Cook pasta for 5 minutes.
Drain and return the pasta to the pot.
Add tomato sauce and stir.
Add basil leaves and half of the mozzarella slices.
Mix to combine.
Transfer to a baking dish.
Top it off with the remaining mozzarella slices.
Put inside the oven and let it bake for 25 minutes.
Remove, then serve and enjoy!
