A famous American salad is the cobb salad primarily served as a main dish. Some may serve this recipe as a side dish. This salad consists of lettuce, cherry tomatoes, avocado, cooked chicken strips, bacon bits, hard-boiled eggs, and red onion slices. Garnish the salad with crumbled blue or feta cheese and some finely chopped parsley. Drizzle it with balsamic vinaigrette or any dressing you prefer for your cobb salad. Ingredients:
• 6 oz bacon (chopped)
• 6 cups Romaine lettuce (washed and chopped)
• 2 chicken breasts (cooked and sliced into strips)
• 2 hard-boiled eggs (sliced)
• 1/2 cup red onion (thinly sliced)
• 1 cup cherry tomatoes (halved)
• 1 large avocado (sliced)
• 1/2 cup blue or feta cheese (crumbled)
• some parsley (finely chopped)
Balsamic Vinaigrette:
• 1/3 cup extra virgin olive oil
• 3 tbsp balsamic vinegar
• 1 tbsp dijon mustard
• 1/4 tsp salt
• 1/8 tsp black pepper
• 1 clove garlic (crushed)
Instructions:
Set a non-stick pan over medium heat.
Cook 6 oz of chopped bacon until golden brown.
Once done, remove from the heat and transfer to a bowl.
Let it cool and set aside.
Prepare a large serving platter.
Add washed and chopped Romaine lettuce on the platter.
Place cooked chicken breast strips and sliced hard-boiled eggs on top of the lettuce.
Next, arrange thinly sliced red onion, halved cherry tomatoes, sliced avocado, and cooked bacon bits.
Sprinkle with crumbled blue or feta cheese and finely chopped parsley.
Meanwhile, mix ingredients for the balsamic vinaigrette.
Drizzle it over the platter.
Serve and enjoy!
