Nutritionists recommend eating fish at least once or twice a week for heart and brain benefits. This recipe gives you a sure-fire hit at the dinner table. Dinner literally ready in 20 minutes. Quick, simple, easy, healthy and flavorful herb-crusted salmon that is perfect with any side dish.
Ingredients:
• 2 center-cut salmon filets, about 8 oz each
• 1 clove garlic, sliced
• ¼ tsp kosher salt
• 1 tbsp tarragon, chopped
• 1 tbsp Italian parsley, chopped
• 1 tsp Dijon mustard
• 3 tbsp mayonnaise
• ⅛ tsp cayenne powder
• 1 tsp fresh lemon juice
• oil
Instructions:
This recipe takes about 12 to 15 minutes to make. Serves 2.
To prepare the herb crust, place garlic, salt, chopped tarragon, and chopped Italian parsley in a mortar and smash using a pestle until the mixture becomes a paste.
Add Dijon mustard and mayonnaise.
Smash more using the pestle just until well incorporated into the herb paste.
Pour in lemon juice and sprinkle cayenne powder.
Mix using a wooden spoon until everything is well blended.
Line a baking sheet with aluminum foil then lightly grease with oil.
Place the salmon fillets on the baking sheet.
Spread herb-crust on the top and sides of each salmon.
Set the broiler to high.
While the broiler is preheating, put the baking sheet on the stove top and turn the burner on.
Once you hear the baking sizzle, remove from heat.
Place baking sheet on the topmost rack in the oven.
Broil for 5 minutes.
Turn the broiler off then set the oven to 350°F.
Bake for another 5 minutes.
Transfer fish to a plate.
Serve with a siding of sautéed or broiled vegetables.

• If you don’t have a mortar and pestle at home, you can use a blender or food processor to make the herb crust.
