Makes about 10-12 sticks
80 minutes total for preparation and cooking
Ingredients:
• 2 cups vegan cheese shreds i.e. Daiya Shreds
• 1 ½ cups vegan breadcrumbs
• 5 Tbsp. garlic powder
• 1 tsp. sea salt
• 1 tsp. pepper
• 1 Tbsp. oregano dried
• 1 tsp. salt and pepper
• 2 cups soy milk
• 1 ½ cups flour
• 2 or 3 cups vegetable oil (If you are super health conscious, try coconut oil, which has the advantage of high temperature stability as well as healthier fat content. Otherwise, a light safflower or vegetable oil will do fine.)
• ¼ cup tomato sauce
Instructions:
Prepare the garlic powder mixture.
Add garlic powder, salt, pepper and oregano in a small bowl. Whisk together thoroughly.
Melt the cheese.
In a glass bowl, add the cheese shreds. Place a pan of water on the stove. Wait until water is in a running boil. Place the glass bowl with the shredded cheese on top of the pan. This serves as a double boiler. Placing the cheese directly on a hot saucepan will burn the cheese!
Stir cheese until it melts. Add 2 tsp. of garlic powder mixture (from step 1) and stir together.
Cool the mixture.
Line a bread pan with parchment paper and pour the melted cheese in. Spread it out evenly and flatten with a spatula. Place in the refrigerator for 1 hour.
Slice the flattened cheese.
Carefully remove flattened cheese from pan by carefully loosening the sides and scraping it out. Place the flat cheese on a clean chopping board. Slice into 10 to 12 sticks, about the width of a finger.
Prepare the coating mixture.
Pour breadcrumbs in bowl. Add the remainder of garlic powder mixture from step 1 to bowl. Whisk together thoroughly. Pour soy milk in a separate bowl. Pour flour in a separate bowl.
Heat the oil in a pan.
Pour vegetable oil into medium saucepan so it’s about 2 or 3 inches deep. Put it on a medium heat and let it warm up.
Dredge the cheese.
Dunk cheese stick in soy milk, dredge it in the flour, dunk it back in the soy milk and roll it in the breadcrumbs. Repeat for all the cheese sticks.
Fry the coated cheese sticks.
Carefully place them in hot oil to fry. Once golden brown, take them out with a pair of tongs and set on a paper towel to absorb the oil.
Ready and serve.
Serve with a cup of tomato sauce. Share with family or enjoy by yourself.
Tips:
• You can opt for a dip of your choice.
• Healthier options for oil used for deep frying are sunflower and olive oil.
