Easy Vegan Tacos Recipe

A taco is a traditional Mexican food made of a corn or flour tortilla that is folded or rolled around a filling that can include beef, pork, chicken, seafood, vegetables, and cheese. A taco is generally eaten without utensils and is notoriously messy to eat. According to food history, the taco was invented by Mexican miners in the 18th century.

This easy vegan taco recipe uses Yves meatless ground round mixed with chopped mushrooms for the main filling. It is made tastier by the fresh tomato salsa, simple guacamole, and cream sauce. This taco is perfect for parties. One popular option is to let your guests build their own taco with whatever filling they want.

Ingredients:

taco shells
shredded lettuce

Meatless Ground Round:

• 1 pack Yves meatless ground round
• 1 garlic clove, minced
• ½ cup of finely chopped onion
• 1 cup of chopped mushroom
• 1 tbsp coconut oil
• 1 tsp cumin
• 1 tsp chili powder

Fresh Tomato Salsa:

• 1 tomato, diced
• 1 ½ tbsp finely chopped red onion
• ½ lime, juiced
• 1 tbsp finely chopped cilantro
• sea salt & ground pepper to taste

Mayonnaise-Cilantro Cream Sauce:

• ½ cup of vegan mayonnaise
• 2 tbsp lime juice
• ½ tsp onion powder
• sea salt and ground pepper to taste

Simple Guacamole:

• 1 avocado
• 1/2 lime, juiced
• sea salt & ground pepper to taste

Instructions:

This recipe takes about 30 minutes to make. Serves 10 to 12 tacos.

To prepare the meat filling, heat a large pan over medium heat.
Drizzle oil and sauté onions, garlic, and mushroom for about 3 minutes.
Add meatless ground round, cumin, and chili powder.
Continue sautéing for 5 to 7 minutes.
Turn off heat and set aside to cool.
To make the salsa, squeeze diced tomato to remove excess water and put it in a bowl.
Add red onion, lime juice, cilantro, sea salt, and ground pepper.
Mix everything together and refrigerate until you’re ready to assemble the tacos.
To make the guacamole, scoop out the flesh of the avocado into a bowl.
Add lime juice, salt, and pepper.
Mix while mashing the avocado flesh until everything is mixed up.
Mix all the ingredients for the vegan mayonnaise in a small bowl.
Feel free to load the taco shells with as much filling you want.

Ideas And Tips:

• You may use flour or corn tortillas as-is to make soft tacos. If you want the taco shells to be crunchy, coat both sides of the tortilla with oil or cooking spray. Drape each tortilla over two bars of your oven rack then bake at 375°F for 7-10 minutes. To prepare using a microwave, fold and put the tortilla in a coffee mug to form a taco shell. Cook in the microwave for 1 minute.

• You may use taco seasoning mix to season the vegan ground round.

• You may add chopped dill to the vegan mayonnaise.

• You may add chopped jalapeño and shredded vegan cheese to the taco filling.
