Tacos are tortillas filled with meat, vegetables, fish or cheese. It is a traditional Mexican dish that does not need any utensils to eat. There is a variety of garnishes used for tacos such as guacamole, cilantro, salsa, onions, and lettuce.
This recipe is a simple fish taco. Tilapia fillets are marinated in lime juice and grilled. Served with creamy mayonnaise and yogurt sauce, and garnished with cabbage and tomatoes. This is a refreshing dish for a hot summer day.
Ingredients:
• 8 tilapia fillets
• 32 corn tortillas
• 3 large limes
• 1 cup of plain yogurt
• 3/4 cup of mayonnaise
• Half a tsp of garlic powder
• 1 tsp of ground cumin
• Half a cup and 1 tbsp of chopped cilantro
• 2 cups of shredded cabbage
• 4 ripe tomatoes, chopped into cubes
• Salt
• Oil
Instructions:
This recipe takes about 60 minutes to make. Serves 16 small tacos.
Place fish fillet in a big dish. Marinate with lime zest, lime juice, salt, garlic powder, and oil.
Cover the fish and set aside in the fridge for at least 30 minutes to marinade.
In a bowl, mix yogurt, mayonnaise, garlic powder, cumin, and cilantro.
Pour lime juice and season with salt. Set aside.
Cut cabbage into thin strips, and chop tomatoes into small cubes.
In a big bowl, mix cabbage, tomatoes, and cilantro together. Season with lime juice and salt.
Heat the grill. Soak paper towels with olive oil and run through the grill grid.
Cook the fish fillets on the grill for 6 to 7 minutes on each side.
Heat the tortillas on the grill.
To assemble, smear tortilla with mayonnaise sauce.
Add fish fillet and top off with vegetables.
Ideas And Tips:
• Aside from tilapia, you can use other types of mild white fish like catfish or halibut.
• You can also pan-fry the fish fillet instead of grill it.
