Jamaican Style Escovitch Fish
A simple and tasty recipe from Jamaica that’s best served for lunches and dinners. This recipe highlights the vinegar-based sauce with tasteful bell peppers, carrots and onions.
Ingredients:
• 1 small green bell pepper, chopped
• 1 large onion, chopped
• 1 small carrot, julienned
• 1/4 teaspoon fresh ground black pepper
• Salt to taste
• 1 small hot red pepper, chopped
• 3/4 cup vinegar
• 1/2 teaspoon granulated white sugar
• 1 1/2 – 2 lbs red snapper
• fresh thyme
• 1 scallion
• 1 lime
• 1 cup vegetable oil
• Pimento berry or Pimento AllSpice
Instructions:
This recipe takes about 20 minutes. Serves 2-3.
For preparing the red snapper:
Cut 2 slits on each side of the fish.
Wash it with lime juice.
Stuff the fish with scallion and fresh thyme.
Sprinkle fresh ground black pepper and a pinch of salt on each side.
Pour vegetable oil into a frying pan over medium to high heat.
Fry the fish for 5 minutes on each side or until golden brown.
Transfer to a plate.
Set aside.
For the escovitch sauce:
Set the saucepan over medium heat.
Pour vinegar, salt, and black pepper.
Add all the chopped up ingredients like onions, bell peppers, and carrots.
Add a dash of Pimento AllSpice.
Stir and add a pinch of salt.
Let it cook for 4-5 minutes.
Pour the escovitch sauce on the red snapper then serve.
Tips and ideas:
To avoid oil splattering while frying the fish, pat the fish dry using a tissue.
For extra flavor, you can add 1 tablespoon of oil from where you fried the fish.
