Roasted potatoes is a great dish for breakfast or brunch. If you don’t have an oven, don’t worry because you can also cook this tasty and tender roasted potatoes by pan-frying. Serve with hot sauce or mayonnaise, you will surely start your meal perfectly.
Ingredients:
• 1 kg potatoes
• 4 tbsp olive oil
• 1 tbsp salt
• 1 tbsp garlic (minced)
• 1 tbsp rosemary (chopped)
• 1/2 teaspoon black pepper
• 1/2 teaspoon red chili powder (optional)
• 2 tbsp chopped coriander (optional for garnishing)
• Salt and black pepper to taste
Instructions:
Wash the potatoes with skin on.
Cut in half or quarters, depends on the size of the potato.
Boil water in a pan.
Add 1 teaspoon of salt once it boils.
Add the potatoes.
Let it boil for 10 minutes.
Set aside.
Meanwhile, set a small pan over medium heat.
Put olive oil and let it heat.
Saute garlic and rosemary until garlic turns slightly brown.
Add to the potatoes.
Season with salt, black pepper, and chili powder.
Mix until well combined.
With Oven:
Preheat oven to 200 C.
Prepare a baking tray lined with parchment paper.
Put the potatoes on the tray.
Let it bake for 30 minutes.
Flip on the other side and bake for another 30 minutes.
Remove from the oven.
Serve and enjoy!
Without Oven:
Set a frying pan over medium heat.
Put olive oil and let it heat.
Add the potatoes and let it fry for 15-20 minutes or until they look crispy.
Flip every 5-minute interval.
Transfer and serve!
Tips and ideas:
You can top it off with freshly chopped coriander.
Serve with mayonnaise or hot sauce.
