Quick And Easy Kanda Batata Poha Recipe

Poha is a popular vegetarian rice dish in Western India and is considered an important part of the Indian cuisine. It is made with flattened rice or rice flakes mixed with vegetables and different spices and herbs. It is an easy-to-cook nutritious dish typically eaten for breakfast or as a snack. It can also be served with curry for lunch or dinner. Poha is also the local name of the flattened rice. Poha comes in two varieties; thick and thin. The thick variety, which is used in this recipe, takes longer to absorb water but does not get too mushy unless soaked in water for a long time. With this recipe, you can make a delicious savory dish that is perfect to be eaten on its own or served with your favorite main dish.

Ingredients:

• 2 cups of thick poha (aka flattened rice)
• 2 cups of water
• 1½ tbsp cooking oil
• 2 tbsp peanuts
• 2 tsp mustard seeds
• 8 fresh curry leaves
• ½ cup of chopped onions
• 1 tsp chopped green chilies
• ¼ tsp turmeric powder
• ½ cup of diced potatoes, boiled
• ½ tsp salt
• 2 tsp lemon juice
• 2 tbsp chopped coriander leaves
• ½ tsp salt

Instructions:

This recipe takes about 20 minutes to make. Serves 2 to 3.

Put thick poha in a bowl and add water.
Mix with a spoon, the let the poha soak for 2 minutes.
Drain water from the poha and set aside.
Heat oil in a pan over medium heat.
Add peanuts and stir-fry for 1 to 2 minutes.
Remove peanuts from the pan and set aside.
In the same pan, add mustard seeds, curry leaves, and chopped onions.
Sauté for 2 to 3 minutes.
Add green chilies, turmeric powder, potatoes, and salt.
Stir-fry over low heat for about a minute.
Add fried peanuts, poha, lemon juice, half of the chopped coriander leaves, and salt.
Stir well, then turn the heat off.
Cover the pan with a lid and let the poha absorb all the flavors for 2 minutes.
Transfer poha to a serving dish, then sprinkle the remaining coriander leaves on top.

Ideas And Tips:

• You can also add frozen peas and chopped carrots.

• If the dish is too dry, you may sprinkle water to the poha while cooking.
