Raw Cucumber Tomato Salad

Here’s an easy recipe for raw foodies, raw vegans or anyone who just doesn’t have the time in their hands for lengthy cooking preparations but still want to eat healthy food.

This recipe has a lot of variations depending on who’s preparing it. If you hate the junk (salt, oil, vinegar, sugar) that comes with the usual raw cucumber tomato salad, then you will definitely love this super clean recipe.

Tools/Materials:

• Bowl
• Chopping board
• Knife

Ingredients:

• ¾ cup chopped celery
• 2 cups diced cucumber
• 1 ½ cup sliced tomatoes
• 1 tablespoon freshly-squeezed lemon juice

Instructions:

Prepare the ingredients.

Make sure to wash the veggies carefully. As much as possible, only buy organic produce.

Chop or dice the celery according to your preferred size.

Peel the cucumber. (Watch the video how it’s done.) Dice. You can also thinly slice the cucumber if that’s what you prefer.

Slice the tomatoes.

Tip: Get the best tomatoes you can find for this recipe. The quality of the tomatoes will greatly make a difference.

Put the chopped ingredients in a bowl.

Cut the lemon and squeeze onto the veggies.

Mix all the ingredients in the bowl.

Serve and enjoy your own raw cucumber tomato salad with celery!
