Store-bought creamy dressings are generally high in fat content, full of sodium, overly sugary, and loaded with preservatives. This turns a healthy salad into a dietary nightmare – so most health-conscious people resort to just using vinaigrette for their salads. But, having a couple of creamy salad dressings on hand makes it easier to eat more salads.
Ranch dressing which is primarily made using dairy may be America’s favorite, but not everyone loves it. You can make your own vegan ranch dressing at home without any dairy.
This recipe uses soaked cashew nuts instead of dairy as the main ingredient. The nuts are blended with herbs and spices to achieve that same ranch dressing taste without the added calories. This home-made ranch dressing can store in the refrigerator for up to 5 days.
Ingredients:
This recipe takes about 5 minutes to make. The cashew nuts need to soak in water overnight. Serves 8.
• 1 cup of soaked raw cashews
• 3/4 cup of water
• 2 tbsp fresh lemon juice
• 1/2 tsp garlic powder
• 1/2 tsp onion powder
• 1/4 tsp teaspoon salt
• 1 tbsp minced fresh basil
• 1 tbsp minced fresh dill weed
Instructions:
Soak cashew nuts in water overnight. Strain excess liquid before using.
Place cashew nuts, water, lemon juice, garlic powder, onion powder, and salt in a blender.
Blend on high speed until smooth and creamy.
Add basil and dill weed. Pulse briefly just to mix.
Store in a sealed container in the refrigerator until ready to use.
Ideas And Tips:
• When substituting fresh with dried herbs, the ratio to follow is 3 portions of fresh herb = 1 portion of dried herb.
• Traditional ranch dressing is known as primarily white in color with specks of herbs and spices. Quickly pulsing the herbs to finish the dressing is just enough to mix the herbs into the dressing. If you blend the herbs too long, you’ll end up with a green-colored dressing.
• This dressing can also be made as a ranch dip. Simply reduce the amount of liquid to make the mixture thicker.
