Not satisfied with the vegan mayonnaise you get from the store? Here’s a simple and easy recipe that will get you going for that healthy vegan mayo. It takes only 5 minutes to achieve this. Enjoy!
• 1 tbsp lemon juice
• 1 teaspoon apple cider vinegar
• 1 cup grapeseed oil (or olive oil)
• 1/2 cup unsweetened soy milk
• 1/2 teaspoon agave
• 1/4 teaspoon dry mustard (or 1/2 teaspoon Dijon mustard)
• 3/4 teaspoon salt
This takes only 5 minutes to prepare.
Prepare a blender.
Put unsweetened soy milk, apple cider vinegar, lemon juice, agave, dry mustard, and salt.
Blend on high speed for a minute.
Reduce to low speed.
Pour the grapeseed oil or olive oil gradually.
Continue to blend on low speed for a minute or until the mixture thickens.
Transfer to an airtight container.
Place inside the fridge.
This can be stored up to a month.

Perfect for veggie or fruit salads.
You can also use almond milk and coconut milk, but the texture will be different.
