Raw vegan treats are healthy yet delicious vegan versions of classic desserts. Raw chocolate truffles and raw strawberry pie are two of the yummy treats featured in this collection. Enjoy!
1. Raw Chocolate Truffles
Ingredients:
Truffle:
• 1/2 cup extra virgin coconut oil (cold-pressed)
• 2 cups walnuts
• 1 cup shredded coconut
• 3/4 cup cocoa powder
• 1/2 cup maple syrup
• 1 tsp sea salt
• 1 tbsp vanilla extract
Ganache:
• 1/2 cup cocoa powder
• 1/2 cup agave nectar
• 1 cup extra virgin coconut oil
Instructions:
Truffle:
In a food processor, add walnuts and shredded coconut.
Pulse until fine pieces form.
Add cocoa powder, maple syrup, and coconut oil.
Season with salt.
Add vanilla extract.
Pulse until thick and well combined.
Once done, transfer to a bowl.
Place in the freezer for 20 minutes.
Once done, form the dough into truffle-sized balls.
Place them on a baking tray lined with nonstick paper.
Put in the freezer for 20-30 minutes to set.
Ganache:
Add all ingredients to the food processor.
Pulse until smooth and well combined.
Transfer to a bowl.
Set aside.
Assembly:
Once the truffle dough balls are set, remove them from the freezer.
Using a skewer or fork, lift each truffle and dip into the ganache.
Tap lightly to remove excess ganache.
Put it back on the lined baking tray.
Repeat this with the rest of the truffles.
Top it off with anything you like such as sea salt, cayenne, or cacao nibs.
Place in the freezer to set.
Serve and enjoy!
2. Raw Strawberry Pie
Ingredients:
Crust:
• 1 cup local walnuts
• 2-3 tbsp coconut oil
• 1-2 tbsp agave nectar
• pinch of salt
Filling:
• 1 cup local walnuts
• 3-4 tbsp maple syrup
• some freshly ground cinnamon
Topping:
• strawberries (hulled and sliced)
Instructions:
Crust:
In a food processor, add a cup of walnuts.
Pulse until fine pieces form.
Add some coconut oil and agave nectar.
Season with salt.
Pulse until well combined.
Once thick and well combined, transfer to a pie tin.
Press the mixture down the bottom and along the sides to form the crust.
Place inside the fridge to set.
Filling:
Soak a cup of local walnuts in water.
Drain the water, then transfer walnuts to a food processor.
Pulse until fine pieces form.
Add some freshly ground cinnamon.
Add 3-4 tbsp maple syrup.
Pulse until smooth and creamy.
Once done, pour over the crust.
Spread evenly using a spatula.
Add and stack sliced strawberries around the top.
Place inside the freezer for a few hours for the filling to completely set.
Once set, slice to equal portions.
