Strawberries are commonly used in desserts for their sweet and sour taste. They add a pop of color with their bright red color. Sliced strawberries often look like hearts, so this dessert is perfect to serve on a romantic dinner. What a great gift to give to your newly engaged friend, or to serve during an anniversary dinner.
The cake is light and moist, and the custard filling gives the right amount of sweetness. Each bite is filled with strawberry goodness.
Ingredients:
Sponge Cake:
• 12 egg yolks
• 7 egg whites
• 250 grams of sugar
• 250 grams of flour
Pasty Cream Filling:
• 2 cups of full cream milk
• 1 tsp of vanilla extract
• 4tbsp of cornflour or cornstarch
• Half a cup of sugar
• 2 eggs
• 60 grams of butter
* 1.5 tsp of gelatin powder
• 2 cups of cream
Strawberry Gel:
• 250 grams of strawberries, rinsed and stems removed
• 1 tsp of agar agar
Instructions:
Sponge Cake:
The sponge cake base takes about 15 minutes to prepare and 5 minutes to bake.
Preheat the oven to 180C.
Place being paper over a non-stick pan.
Divide the sugar into 2 bowls: one with the egg yolks and the second one with the egg whites.
Whisk the egg whites with sugar until stiff peaks appear. Use the same process with the egg yolks.
Sift flour over the egg whites and then fold in the egg yolks mixture.
Pour the batter into the baking pan. Flatten to make a thin cake.
Bake for 5 minutes and set aside to cool.
Pasty Cream Filling:
The filling takes about 8 to 10 minutes to prepare.
Pour a little bit of milk over the gelatin powder to soften it.
In a saucepan, heat the milk and vanilla. Stir until the mixture thickens.
Add the gelatin and stir until it melts.
Remove from the heat and add the butter. Stir until butter melts and leave to cool.
Whip cream until it forms soft peaks and fold into cooled cream mixture.
Strawberry Gel:
The gel takes about 3 to 4 minutes to make.
Puree the strawberries in a blender.
Use a sift to separate the seeds.
In a saucepan, add the puree and agar agar. Stir until agar agar melts.
Pour the gel over acetate or foil, and flatten it.
Cut using a bigger circle than the sponge cake.
To assemble the cake, cut the sponge cake with the same size as your muffin tin.
Slice strawberries lengthwise and place around the muffin tin.
Glaze the sponge cake with simple syrup (dissolve sugar in water over heat).
Fold the whipped cream over the custard mixture.
Pipe the mixture over the cake. Add another slice of sponge cake at the top.
Place strawberry gel on top layer of sponge cake.
Garnish with white chocolate and strawberries.
