Stuffed mashed potatoes is another tasty food that can be served as a snack or appetizer. Loaded with flavorful stuff and the sweetness of the potatoes, you will surely enjoy the crispy yet flavorful stuffed mashed potato balls.
Ingredients:
• 3 large potatoes
• 1/2 kilo lean ground meat
• red bell peppers (diced)
• 3 cloves of garlic (chopped)
• 1 onion (chopped)
• tomatoes (diced)
• 1/2 cup corn
• 1 tsp oregano
• salt and pepper to taste
• 3 eggs (beaten)
• 2 tbsp flour
• Oil for frying
Instructions:
For the filling:
Set a pan over a medium-high heat.
Add the lean ground meat.
Fry for a few minutes until it turns into brown.
Add diced red bell peppers, diced tomatoes, chopped garlic, and diced onion.
Add corn.
Season with salt and pepper.
Stir and let it cook for a few minutes.
Set aside.
For the potatoes:
Boil the 3 large potatoes until smooth enough.
Mash it until fine.
For the egg mixture:
Crack open 3 eggs in a bowl.
Add 2 tbsp of flour.
Mix until well combined.
Assembly:
Take about 2 scoops and form it into a ball shape.
Flatten it.
Scoop some amount of the filling and place it on the center.
Roll it again into a ball.
Repeat for the rest.
Dip and coat the balls with the egg mixture.
Set a pan over 375 C or medium-high heat.
Heat oil for frying.
Place the balls in and move them around.
Fry for a few minutes until golden brown.
Serve and enjoy!
Tips and ideas:
Some add more ingredients for the filling such as green onions, bacon bits, and shredded cheddar cheese.
Some enjoy it with variety of dips on the side.
