Vegan Black Bean Avocado Chocolate Cupcakes Recipe

Avocado is an incredibly nutritious fruit. It is not only packed with fiber, but also it has more potassium compared to bananas. It can help in lowering triglyceride and cholesterol levels. Incorporating it with chocolate cupcake is another way to up your healthy diet.


For the cupcake:

• 1 1/4 teaspoon baking powder
• 1 cup all-purpose flour
• 1/2 cocoa powder
• 1/2 cup black beans (rinsed and cooked)
• 1/2 cup ripe avocado
• 1/2 cup raw sugar
• 1/2 cup water
• 1/4 teaspoon baking soda
• 1/4 teaspoon salt
• 1/4 cup vegan butter
• 2 teaspoons vanilla extract

For the avocado frosting:

• 2 medium avocados (ripe)
• 2 teaspoons lemon juice
• 1 lb powdered sugar
• 1/2 teaspoon vanilla extract


For the cupcake:

Preheat oven at 350 F.
Prepare the cupcake tins with 12 paper liners.
Prepare a large mixing bowl and pour in cocoa powder, baking soda, baking powder, and salt.
Whisk together until well combined.
Set aside.
In another bowl, put black beans, avocado, vegan butter, vanilla extract, and raw sugar.
Use an electric hand mixer to mix the ingredients thoroughly.
Pour water.
Add the dry ingredients into the bowl.
Keep mixing using the electric hand mixer.
Scoop the mixture and place it in the cupcake tins.
Bake for 22 minutes.
Remove and set aside.

For the frosting:

In a large mixing bowl, put the ripe avocado.
Mix using an electric mixer until the avocados are creamy and smooth.
Add vanilla extract and lemon juice.
Add powdered sugar gradually and mix well.
Pour the frosting in a piping bag.
Squeeze the frosting on top of the cupcakes.
Serve and enjoy!
