Kimchi Pancakes

In most countries, pancakes are made from flour, eggs, and milk.

This recipe is unique and adds Korean flavors to the regular pancake. Kimchi is the main ingredient in these pancakes. A mixture of sour and spicy, kimchi is a Korean side dish made from fermented vegetables. Traditionally, it is stored underground. The longer it sits, the more delicious and flavorful it becomes. These 2 pancake recipes will bring Korea into your homes.


Kimchijeon (chopped kimchi)
• 1 cup of finely chopped kimchi
• 2 tbsp of kimchi soup (the liquid where the kimchi marinades in)
• 1 onion
• Half a tsp of salt
• Half a tsp of sugar
• all-purpose flour
• 1/4 cup of water
• 2 tbsp of vegetable oil

Kimchijeon (whole kimchi leaves)
• 6 to 7 kimchi leaves
• 2 tbsp of minced or ground pork
• 2 tbsp of tofu, drained and patted dry
• 1 tsp of chopped onion chives or spring onion
• Half cup of all-purpose flour
• Salt
• Pepper
• Sesame oil
• 1 egg


Kimchijeon (chopped kimchi)

This recipe takes about 10 minutes to make. Serves 2 to 4.

Chop the kimchi into small pieces.
In a large bowl, add the chopped kimchi, onion, salt, sugar, kimchi soup, and water. Mix well with a spoon.
In a frying pan over high heat, pour the oil.
Pour the entire batter into the pan. Flatten the batter with the back of a spoon.
Cook for a minute and then turn it over to cook for another minute.
Lower the heat and flip again.
Cook for another minute and transfer to a plate. Slice into bite-size pieces.

Kimchijeon (whole kimchi leaves)

This recipe takes about 10 to 15 minutes to make. Serves 2 to 4.

In a large bowl. add pork, tofu, chives, and onion.
Season with salt and pepper.
Sprinkle some sesame oil.
In another bowl, beat 1 egg.
Coat the kimchi leaves with flour.
On one side of the kimchi leaf, put one scoop of the meat mixture. Cover with flour.
Dip the leaf in an egg, and fry in a hot pan with oil.
Repeat the process for all the kimchi leaves.
Cook kimchi leaves for 1 to 2 minutes on each side.
Garnish with dried chives.

Ideas and Tips:

• If you want to keep these dishes vegan, you can leave out the pork. You can substitute with other vegetables, nuts, or just leave it out.
