Ultimate Spanish Omelette Recipe

Spanish omelette is the English name for the Spanish dish tortilla de papatas. It is a traditional dish made from eggs and potatoes. It is often accompanied by onions, garlic, or chives. It is served cold as an appetizer.

This recipe shows an easy yet authentic way to prepare Spanish omelette. There are only a couple of ingredients to this recipe. This dish is ready to serve in less than an hour. Sweet, salty, and creamy, this dish can be enjoyed any time of the day.


• Approximately half a liter of extra virgin olive oil
• 1 white onion, thinly sliced
• Salt
• 2 potatoes, peeled and sliced
• 6 eggs


This recipe takes 40 to 45 minutes to make. Serves 4 to 6.

Place a frying pan over high heat and pour extra virgin olive oil.
Add the onions and potatoes into the pan.
Cook for 10 to 15 minutes until the potatoes turn slightly golden brown.
Crack open 6 eggs in a big bowl.
Drain the potatoes and place in the bowl with the eggs.
Mix well with a spoon.
Season with salt.
Cover the bowl with foil and let it set for 15 minutes.
Pour the mixture into a non-stick pan over high heat.
Cook for 1 minute over high heat, lower the heat and cook for 2 minutes.
Use a plate to flip the omelette.
Cook on high heat for 1 minute and then cook on low heat for 2 minutes.

Ideas and Tips:

• To check if the omelette is cooked through, you can stick a toothpick or a knife in the middle. If it some of the mixture sticks on the toothpick or knife, give it another 2 minutes to cook. If it comes up clean, it is ready to serve.
