1. Apple and Spice Oatmeal
Ingredients:
• ½ cup of rolled oats
• ½ cup of quick cooking oats
• 1 ½ cups of water
• ½ cup of soy milk
• ¼ tsp cinnamon
• 1 tbsp raisins
• 1 apple, cut into chunks
• molasses
Instructions:
This recipe takes about 10 minutes to ae. Serves 1 to 2.
Put oats, water, soy milk, cinnamon, raisins, and apple in a saucepan.
Cook over medium heat until the oats are cooked and you get the creamy consistency.
Pour into a bowl and top with fresh apple slices and a drizzle of molasses.
2. Mixed Veggies And Rice
Ingredients:
• 2 cups of cooked rice
• 1 tbsp water
• ¾ cup of frozen corn kernels
• ½ cup of frozen sweet peas
• ¾ cup of black-eyed peas
• sriracha
Instructions:
This recipe takes about 10 minutes to make. Serves 1 to 2.
In a saucepan, put water, corn kernels, sweet peas, and black-eyed peas.
Cooked over low heat just until veggies are lightly cooked.
Put rice and mixed veggies in a bowl and mix well.
Drizzle with Sirach on top.
3. Crispy Baked Potato Fries
Ingredients:
• 4 rustic potatoes, cut into wedges
• 1 tsp garlic powder
• 1 tsp cumin
• 2 tsp smoked paprika
Instructions:
This recipe takes about 40 minutes to make. Serves 3 to 4.
Mix all ingredients in a large mixing bowl.
Make sure all the potato slices are coated with the seasonings.
Arrange potato slices on a baking sheet lined with a silicone mat.
Bake in the oven at 400°F for 35 minutes.
Serve on a bed of fresh greens.
Ideas And Tips:
• For the apple and spiced oatmeal, you can use coconut, sugar, maple syrup, honey or peanut butter as toppings. You can also use berries or other fruits. You can use nut for an added crunch.
• For the mixed veggies and rice, you may use brown rice or quinoa.
